Chicken Dijon Marsala

Take this pork tenderloin recipe from Allrecipes, substitute 4 chicken breasts and you are in for an incredible entree. We substituted 6 green onions chopped, including the green. Coat the chicken breasts with the dijon mustard. Brown 2-3 minutes each side. Place in a roasting pan, 10 minutes, flip 10 more minutes or until done. Simply wonderful results. It’s a second helping entree. Enjoy.

Savory Baby Bella’s

Looking for a great portabella mushroom recipe last night so I combined a few and the results were wonderful. Enjoy.

1 lb baby portabella mushrooms
4 cloves garlic sliced
4 green onions sliced, including green
1 cup red wine

Saute garlic in 1 TB of olive oil and 1 TB butter until flavor releases. Add mushrooms, onion, salt and pepper, cooking until juices released and cooked off. Add 1 cup red wine and cook until wine is cooked down. Delicious.

Roasted Eggplant

Learned a lot about eggplant with this recipe! Scoring, salt and letting it sit. Delicious results letting the eggplant rest with the salt and roasting with the thyme. Enjoy.

Tip: Salt first for less oily eggplant. Eggplant soaks up oil like a sponge, but you can reduce its ability to absorb oil by salting the cut flesh and letting it sit for 30 min. or more. Then drain, pat dry, and proceed with cooking.

Tomato Tarts

Fun appetizer idea shared from a friend. Take Pepperidge Farm puff pastry, roll to 1/4 ” thick. Using 1″ and 2″ cookie cutters, cut rounds. Top with a gruyere or fontana shredded cheese. Thinly slice grape and / or cherry tomatoes, yellow and red for some color variation and top the cheese. Sprinkle with salt, pepper and fresh thyme. Bake at 400 for 10-15 minutes or until golden brown. Delicious and very elegant looking appetizer. Enjoy.

Best Turkey Ever!

I was searching for new Turkey recipe and discovered this delicious turkey recipe passed down from generation to generation. The spice rub is fantastic. I have used white wine previously, the champagne made for a very moist turkey. Baked wrapped in foil for 2 hours (10-11 # bird), open and continue to roast until done. Delicious and beautiful result. My recipe of choice now. Enjoy.
