Pizza with Italian Sausage, Peppers and Balsamic

Delicious and fun!

1 Thin pre-made pizza crust (such as Boboli)
1/2 Pound italian sausage browned
1 Small red onion sliced thin
1 Cubanelle (Anaheim if you can find works well too) pepper sliced thin
1/2 c Parmesan cheese
1/2 c Mozzarella cheese
Thinly sliced fresh basil
Balsamic vinegar

Lightly coat the pizza crust with olive oil. Top pizza crust with sausage, sliced onions and peppers, cheeses. Broil until cheeses are melted and slightly browned. Sprinkle balsamic vinegar and basil. Yum. Enjoy.

NOTE: Chicken Italian Sausage works great!

Florentine Egg Cups

Try these Florentine Egg Cups from Martha Stewart! Delicious….Be sure to thaw your spinach the day before and squeeze really dry. These are unbelievably delicious and easy to put together. They bake up beautifully. We used Knorr Hollandaise Sauce or you can make your own. Very good.

Everyday with Rachel Ray nailed it again with her Cinnamon Sugar Twists. Easy, fun and delicious.

I apply the butter, cinnamon-sugar, chopped pecans to both sides. Press to adhere to the pastry. Very good.

Grilled Filets with Pecans and Green Bean Ravioli

This is really good! We enjoyed this spin on pasta. Love the ravioli! We used mini-fresh cheese ravioli, plated beautifully. The pecans, sage, green beans and ravioli made a great compliment to the filet mignon.

Note: We age the filets by rolling them in kosher salt. Set on a rack in a cookie sheet at room temperature for 1 hour before cooking. Rinse well. And pat dry, they need to be very dry. The steaks will have a great salt flavor, so I only pepper the filets to prepare them for cooking.

I saute in an oven proof pan 5 minutes, turn and roast in a 400 degree oven uncovered for 5 minutes, remove from oven and rest 5 minutes. The most unbelievable filet you will ever eat.
