Another great recipe from Food and Wine magazine! They never disappoint – Baked Flounder with Parmesan Crumbles is delicious and oh so easy to prepare. The flounder was moist and just perfect and the parmesan flavor came through. Enjoy!
Tried something new today, Food and Wine’s Chicken with Charred Rosemary Vinaigrette! May 2017 issue. It did not disappoint. What an awesome blend of flavors….chicken, rosemary, caperberries (hard to find but found them online), champagne vinegar, cherry tomatoes and artichoke hearts. We served it over Parmesan risotto – Delicious dinner. Spectacular, Food and Wine never disappoints!
OK – Cooking Light’s great spin on slaw using freshly grated zucchini – nice light, little crunch with the zucchini with an interesting blend of the oregano, scallions and parsley! Honey-Dijon chicken was a superb complement! The honey and dijon flavors come through. Very good recipe! Enjoy.

Yum! Comes close to a bread we love in Captiva. Real Simple’s garlic rosemary monkey bread is rich and delicious with the fontina cheese and fresh rosemary and parsley. Pretty “cheesy and garlicy”! Easy to prepare, can be prepared in advance and ready to serve.
This is awesome! RecipeGirl’s roasted shrimp with rosemary and thyme is a winner – it’s delicious and so easy to prepare. This unique preparation has you roasting the fresh rosemary and thyme in olive oil in a hot oven is amazing, the fragrance is lovely. Then add the shrimp and roast for 10-12 minutes. Crazy delicious results. We served with sautéed fresh spinach and grilled red peppers. Enjoy!
Fixing my favorite strawberry, spinach and poppy seed salad, but need some glazed pecans! Not to be found in the grocery. So we make our own! Delicious I must say…..found this very easy recipe from “Two Healthy Kitchens” boasting of the flavor and ease to make them. Right on all counts. Enjoy.

Chili Recipe:
1 3/4 ground beef 80/20
1/4 bacon
Couple jalapeños (diced, no seeds)
Couple habaneros (diced, no seeds)
Couple onions (sweet)
A shallot
Garlic head (use 6-8 cloves)
2 organic red peppers
1 bag mixed sweet organic peppers
3 cans Rotella Original
4 Tomato sauce 8oz
3 cups water
4 tablespoons chili powder & cumin
1 teaspoon salt, cayenne, paprika, onion flake
2 cans kidney beans
2 cans black beans
Dice all the vegetables, add the beef and bacon, saute until brown then add the rotella, tomato and spices in a large pot. Bring to a boil then add drained beans.
