Crispy Herbed Shrimp with Chive Aioli

A FANTASTIC shrimp dish from Cooking Light, crispy herbed shrimp with chive aioli.  It’s one of Cooking Lights quick and easy recipes and it is awesome. We skipped the breading, used the herbs and grilled them in a grill pan with a touch of my favorite, Italian butter. Amazing results. We served the shrimp over roasted asparagus and tomatoes, suggested side by Cooking Light. The thyme and scallions together were remarkable. The chive aioli was a delicious compliment to entree and vegetables. Delicious meal. Enjoy.

Herb Chicken Skillet with Spinach and Tomatoes

Zach came home with a huge container of spinach from Costco so I had to find some ways to use it. This is the first recipe, Herb Chicken Skillet with Spinach and Tomatoes  we tried and it’s an amazing blend of savory flavors. The chicken was tender and moist. I substituted the 1/4 cup of water with a white wine and deglazed the pan (everything is better with a little white wine!) after cooking the onions (used green onions instead of a regular onion). Bon appetite. Enjoy. Awesome skillet meal.

Strawberries with Balsamic Vinegar

Wow a great end to a great meal, Ina Garten’s Strawberries with Balsamic Vinegar! We substituted a white balsamic from Robbins Family Vineyards. The black pepper (who would have thought) made for a delicious combination of flavors. We served over the classic meringues and a dollop of fresh whipped cream with some mascarpone. Wow, was good! Lemon Pistachio Cheese Ball

Yum! Another great cheese ball recipe from Everyday with Rachel Ray – Lemon Pistachio Cheese ball.  This great blend of lemon, goat cheese, currants made for a delicious spin on the classic cheese ball appetizer. Oh, and rolled in pistachios and served with vanilla wafers. Very unique and delicious. Enjoy.
