Zach came home with a huge container of spinach from Costco so I had to find some ways to use it. This is the first recipe, Herb Chicken Skillet with Spinach and Tomatoes we tried and it’s an amazing blend of savory flavors. The chicken was tender and moist. I substituted the 1/4 cup of water with a white wine and deglazed the pan (everything is better with a little white wine!) after cooking the onions (used green onions instead of a regular onion).
