Horseradish Salmon

This is a tasty low calorie entree we love, Horseradish Salmon from Good Housekeeping magazine, February 2010. If you like horseradish and dill this is fantastic and so simple to make. I often use the spinach as a side salad with other dishes as well. Enjoy.

It’s the 4th of July 2012 and there is nothing better than The Original Potato Salad by Hellmann’s. It’s a holiday mainstay many of us grew up on! Delicious every time. I always add a little Dijon mustard, about a half cup.

Shrimp Florentine Pasta

This is a delicious Cooking Light spin for shrimp, fettucine and spinach. The red pepper gives it a distinctive flavor, but you must like this spicy version. Easy, quick, delicious, enjoy. And the caprese they recommend is a great complement to this dish. Caprese in our house is a compliment to every dish!

Incredible Baked Beans

This baked bean recipe has morphed over the years, taking the best of many different recipes while keeping it simple and full of flavor….enjoy.

2 TBS Olive oil
3 onions ( we prefer the green onions substituting 3 bunches) chopped
1 (16 oz) can kidney beans, drained
1 (16 oz) can chili beans, undrained
1 (16 oz) can pork and beans, undrained
1 small can green lima beans (we use 2…love limas)
1 cup firmly packed brown sugar
1/4 cup catsup
1/4 cup red wine vinegar
1/4 tsp garlic powder
1 tsp prepared mustard

Saute onions in olive oil until soft. Mix with remaining ingredients. Bake at 350 for 1 hour, or slower oven for 2 hours.
