Baby Squash with Basil and Feta

We found these cute little baby squash – patty pan and zucchini at Costco this weekend! Makes for a fun, low fat, flavorful and artsy side dish with all our favorite flavors, squash, basil and feta. Yum. Enjoy….

1 T. Olive Oil
4 cups Baby Mixed Squash
2 cups sliced leek
1/2 tsp salt
1/8 tsp ground pepper
3 T crumbled feta cheese
2 T finely chopped basil

In large skillet, heat oil, swirling to coat pan. Add squash and leek to pan, saute 5 minutes or until tender, stirring frequently. Stir in salt and pepper. Serve with cheese and basil.

Pork Tenderloin with Mustard Sauce

A wonderful marinade with incredible results – a little red wine, soy sauce and a touch of brown sugar – amazing results. This is just too easy to produce such a flavorful tenderloin – Pork Tenderloin with Mustard Sauce. We have several mustard sauce recipes and this one rates with the best of them, a little heat from the mustard powder and a very nice compliment to the flavorful tenderloin. Enjoy.

Yum! Light and yummy dessert from Bon Appetite – August 2013 – Raspberry Fool with Toasted Angel Food Cake. We tried it in dessert shot glasses, loved the look, however would fault on more raspberry sauce, but none the less, still very tasty. Great in a wine glass too! Enjoy.

Garlic Butter Roasted Mushrooms

Great garlic butter roasted mushrooms from our local grocery store, Ralphs….it came in a mailer. Delicious results. Enjoy.

1 lb. mushrooms
3 large garlic cloves, minced
2 T olive oil
Salt / Pepper to taste
3 T butter, cut into pieces
2 tsp fresh lemon juice
1/4 c fresh chopped parsley

Preheat oven to 400. In shallow baking pan, toss mushrooms with garlic, oil, salt and pepper. Top with butter and roast, stirring occasionally, for 15-20 minutes or until mushrooms are tender and golden. Stir in lemon juice and parsley. Serve. Absolutely delicious!
