Mario Batali’s Saltimbocca

Wow is this a spectacular Saltimbocca – Mario Batali’s version with a delicious vin santo and crispy asparagus. It was a bit of a scavenger hunt to locate the vin santo but finally found it at Total Wine! Delicious entree, amazing flavors and looks beautiful plated. Enjoy.

Basil Vinaigrette Dressing

We fixed a delicious salad of romaine lettuce, thinly sliced cucumber, red and yellow sweet peppers and heirloom tomatoes and served with this delicious Basil Vinaigrette Dressing…..yum! We found this on the Simply Recipes site and will add this one to the rotation frequently.

Provencal Goat Cheese Salad

Did you get a food calendar over the holidays?  We did and I found this delicious Provencal Goat Cheese Salad treasure enclosed – March 2014 a great month. Delicious and beautiful when plated.

Here’s what you need…enjoy…

4 oz goat cheese, cut into 4 pieces

1/8 tsp kosher salt

1/8 tsp black pepper

¼ tsp + 1/8 tsp herbs de Provence, divided

3 T olive oil

2 tsp white balsamic vinegar

½ tsp Dijon mustard

1 (8oz) bag mixed baby greens

2 plum tomatoes, sliced

Sprinkle goat cheese generously with salt, pepper, and ¼ tsp herbs de Provence. Set aside. Place olive oil, vinegar and mustard in a large bowl and add remaining herbs de Provence and whisk until creamy.  Add greens and tomatoes to bowl, tossing to combine. Serve each serving with a slice of herbed goat cheese.

Caramel Pecan Cheesecake Pie

Is it a cheesecake? Is it a pie? Whatever it is it is delicious! This easy to make Caramel Pecan Cheesecake Pie was an instant hit! Tastes better each day it lasts…and it did not last too long. We used Torani’s caramel syrup, making it even better. Enjoy.

Mini Pumpkin Cheesecakes with Gingersnap Crusts

We just love mini-cheesecakes, so this week we tried the Mini Pumpkin Cheesecakes from http://www.thecomfortcooking.com with Gingersnap Crusts, terrific! A ginger snap and graham cracker crust coupled with the creamy pumpkin filling made for a delicious outcome! All gone! Enjoy.

For mini cupcakes, bake in muffin tins. Line with cupcake cups. Tap down crust in the bottom of each cupcake cup. Spoon in batter and bake 20-25 minutes. Makes 30 mini cheesecakes. Top with fresh whipped cream!

Peanut Butter Pie Shooters

Continuing my quest to find delicious shot glass desserts….just enough to satisfy the after dinner sweet tooth! We tried these Peanut Butter Pie Shooters and loved them. Made with oreo cookies, milks favorite cookie and mine too, a creamy peanut butter filling and a little sea salt to top it off. We found them on the “Pinch of Yum” web site – fun site and foods. Enjoy….

Hasselback Baked Potatoes

Try this swedish version of the baked potato……..Hasselback Potatoes….fun and delicious spin on a traditional side dish for a standing rib roast or filet mignon. As the recipe suggests, it’s not really a recipe but more of a technique. The tiny  1/8th inch slices into the flesh of the potato accordion it and allow for crispy edges like a french fry with the base of the potato soft, moist and delicious.

There are dozens of versions to pick from on the internet, loaded or as simple as we did….brush the surface with a mix of olive oil, thyme, rosemary, sea salt, pepper and garlic. Roast for 45-60 minutes and serve with chopped fresh parsley or chives and sour cream. Enjoy.

Shrimp and Artichoke Bake

We found this delicious shrimp recipe on a 2014 calendar we received over the holidays, tried it and fell in love with it! This will be in the rotation frequently. Delicious, creamy shrimp and artichoke dish that will just take minutes to put together. Enjoy.

1 (14oz) can quartered artichoke hearts, drained, rinsed and patted dry

5 large eggs

¾ cup milk

½ tsp salt

¼ tsp pepper

1 (16oz) bag frozen, peeled, deveined large shrimp, thawed (we used fresh shrimp)

4 green onions, sliced

1 cup shredded swiss cheese

 

Preheat oven to 350 degrees. Grease a 3 quart casserole and set aside. Place eggs, milk, salt and pepper in a medium bowl. Whisk to combine. Add shrimp, artichokes and green onions, stirring to combine. Pour into prepared casserole and top with cheese. Bake until top is bubbly and golden brown, about 45 minutes. Remove from heat and let cool 10 minutes before serving.

 

Serve with a side salad and roasted green vegetable.
