Mini Cheesecake Cupcakes

I have baked these delicious cheese cupcakes for over 30 years and they are just as creamy and delicious every time. A friend, Martha, share this with me and we bake these all the time.

Bake at 300, 30 minutes

3 (8 oz) softened cream cheese
5 eggs
1/2 tsp vanilla
1 cup sugar

Beat cheese until fluffy, adding one egg at a time, beat well. Add vanilla. Gradually add sugar. Beat well. Fill muffin tin with cupcake liners. Fill cupcake liners 3/4 full. Bake 30 minutes. Remove from the oven, cool for 5 minutes. As they cool an indentation will appear. Fill the indentation with the filling and bake 5 more minutes.

Filling

1/4 tsp vanilla
1/4 c sugar
1 c sour cream
Beat together well. Fill indentation and bake 5 minutes.
