Scallops always seem to be hard to cook well at home but this recipe is a no-fail opportunity! Eating Well’s Panko and Parmesan Crusted Baked Scallops is a perfect recipe. It’s loaded with flavor – lemon, scallions, butter (oh have to have butter) and the panko parmesan crust. Love the whole wheat panko when we can find it. Very good, on the repeat frequently list. Enjoy.
NOTE: Rinse scallops thoroughly, place in a bowl, cover with milk and let sit for an hour – tender and no fishy taste.
