Grilled Romaine with Blue Cheese

I am hooked on grilled Romaine lettuce. Not sure where I was introduced to this – maybe Charleston, WV at a steak house! So this is my spin!  Slice the head of lettuce in half, trim each end. Drizzle with olive oil. Grill face down 3-5 minutes, heat through until you have some nice grill marks. I use a nice grill pan. Now let’s garnish this diamond!  Drizzle with aged balsamic vinegar, heirloom baby tomatoes, sliced red onion, blue cheese and some blue cheese dressing on the side!  Make it an entrée by adding some grilled shrimp, chicken or beef. Enjoy. Bon Appetite!
