Pomegranate Brussels Sprouts

Another great recipe to share, Pomegranate Brussels Sprouts, featured by Ingles a local grocer. Simple and delicious. Enjoy the great macadamia nut flavor with the brussels sprout in a wonderful dressing made of brown mustard, white wine vinegar, honey and of course some minced garlic. We could not find a pomegranate or pomegranate seeds at our local grocery, so substituted dried cranberries. Great side dish for poultry, beef or pork. Bon appetite!

NOTE: we like the brussels sprouts more tender, so cooked for several more minutes to get a nice char and tender result.

Kentucky Bourbon Balls

A Kentucky favorite and a holiday favorite as well, Bourbon Balls! I have had a recipe for decades and lost it in a recent move, so found this one to be a very close match. But suggest adding a 1/4 tsp of lemon juice to the mix! Really does add to the flavor of this sweet treat! Enjoy!

Eggplant Parmesan Boats

If you like eggplant parmesan, you will love the simplicity and deliciousness of this recipe from The Food network cooking show, The Kitchen – Eggplant Parmesan Boats . These make for a great side dish or the main meal for a meatless option. So simple, add the olive oil, spices, roast the eggplant, dollop on the marinara sauce (we love Rao’s), add the shredded mozzarella and the parmesan, stick back in the oven until the cheese is nice and bubbly! Enjoy!

NOTE: Be sure to prep your eggplant to get all the water out. Cut the eggplant in halve, score the eggplant flesh, do not cut into the skin. Salt the surface and let it rest for 30 minutes. You will be amazed at how much moisture come out. Wipe dry and you are ready to add your spices and roast.

Kentucky Bourbon Balls

A holiday favorite, Kentucky Bourbon Balls! This sweet treat is simple to make and great to enjoy over the holidays. I have made these for decades and lost my original recipe and found this one to be close, just add 1/4 tsp of lemon juice for the real deal. Always soak the pecans for a day + so the bourbon is soaked into the nut pieces for a finer finish. Enjoy this sweet Kentucky delicacy! Goes great with a lovely dark roast coffee. A real treat. Enjoy!

Golden Buttery Peanut Brittle

We have not made peanut brittle in years! My grandmother in law always made the best peanut brittle at the holidays. So this holiday season, why not! Right! We are stuck at home, so let’s cook. You simply have to have a candy thermometer to make the brittle easy and correct for a perfect finish. Yum. Enjoy!

Peppermint Meringues

Simple and delicious Peppermint Meringues – sure to please every crowd! Place the meringue mixture into a plastic storage bag, clip one corner and pipe quarter size mounds onto the foil or parchment paper. Top with crushed candy canes. Crispy Chicken Parmesan

A delicious combination of two recipes from by favorite food blogs: Crispy Chicken Parmesan from Cafe Delites and Crispy Baked Parmesan Chicken from Spend With Pennies….

We used the ingredients for the chicken from Cafe Delites, loved all the combinations of panko, bread crumbs, parsley, garlic, parmesan, onion powder…. and baked it using Spend with Pennies suggestion. Turned out beautiful, crispy and rich in color.

We used RAO’s marinara sauce – our bottled favorite!

And dressed it up with Cafe Delite’s fresh mozzarella (we used burrata – extra creamy), parmesan and basil.

Peanut Butter White Chocolate Pretzels

Want to make the “Legendary Muddy Buddies” a Chrissy Teigen and John Legend classic spin on the original Chex party mix, but could not find the peanut butter white chocolate pretzels! So make them myself. Easy peasy…. found a great recipe on the Butter with a Side of Bread cooking blog. Great name right, I can relate! A little bread with the butter is always perfect! So back to the pretzels! Great recipe, easy to fix! And a real professional finish! Enjoy!
