Another recipe from Paula, a great southern cook, who loves to cook as much as I do. A quick and easy creamed spinach. Enjoy.
Cook 4-5 slices of bacon. Remove bacon from the pan and crumble. Add 1/2 chopped onion (I used a bunch of spring onions, including the green) until softened. Add 3/4 cup heavy cream, cooking 3-4 minutes or until thickened. Add 9 oz fresh baby spinach, fold in, cook until wilted. Serve with bacon crumbles on top.
