4 lbs Yukon gold potatoes
1/4 c butter
1/3 c warm milk
1/4 c fresh parsley, chopped
5 oz blue cheese crumbles
Wash and dice potatoes, boil in salted water unitl tender. Drain. Mash potatoes, adding butter and milk to desired consistency. Add salt, pepper to taste. Fold in parsley and blue cheese.
