Rosemary Chicken with Warm Tomato Dressing

This recipe is from “Beyond the Fence” a Kentucky cookbook. This recipe is served at the Kentucky Governor’s Mansion. Add blue cheese mashed potatoes for a delicious meal.

4 boneless chicken breasts
1/4 c lemon juice
1/3 c olive oil
2 T chopped fresh rosemary
2 tsp salt
1 tsp pepper

Mix lemon juice, olive oil and rosemary. Add chicken and marinade for 1 hour. This chicken can be grilled or prepared in a grill pan. Sprinkle chicken with salt and pepper. Grill 4 minutes on each side or until done. If using a grill pan, add 2 T olive oil to the pan, cook 7 minutes each side or until done.

Warm Tomato Dressing – this is the good stuff!
2 tsp olive oil
1 pint cherry tomatoes
3 garlic cloves chopped
2/3 c red wine
1/4 c balsamic vinegar
1 T sugar
1/4 tsp salt
1 tsp red wine vinegar

Heat oil in skillet, adding tomatoes and cook, stirring often until tomato skins are blistered. Stir in garlic, red wine and balsamic vinegar. Continue to cook until liquid has reduced by half, about 5 minutes. Stir in sugar, salt and red wine vinegar and cook for 1 minute more. Spoon over chicken and serve.
