Mushroom and Fontina Stuffed Potatoes

You must try these Mushroom and Fontina Stuffed Potatoes from Food and Wine!  We used shitake mushrooms, they sautéed (dancing in the pan) up beautifully with a rich nutty aroma. The fontina cheese made this side dish incredible. Topped it off with fresh chives. Wow. Delicious. Enjoy.
