Great side dish….Spinach and Artichoke Casserole
- 2 (10oz) frozen chopped spinach, thawed and throughly drained
- 1/2 cup butter
- 1/2 onion finely chopped
- 1 (14 oz) can artichoke hearts (quartered)
- 1 pint sour cream
- 1/2 cup parmesan cheese
- 1/2 tsp salt
- 1/2 tsp pepper
Thaw and drain spinach thoroughly. Saute onions, salt and pepper in butter until soft. Add cheese and sour cream. Fold in spinach and artichoke hearts. Bake 25 minutes at 350, uncovered. Serves 8.
