Grilled Eggplant with Feta and Mint

My new baked potato is this delicious grilled whole eggplant.  Grill whole Japanese eggplant, medium to high heat turning to sear on all sides, then reduce heat and continue to cook until the eggplant is soft. Rest 5 minutes.  Just like a baked potato, slit long ways, open up and drizzle with olive oil and red wine vinegar (whisking 2T olive oil to 1 T red wine vinegar), top with chopped fresh mint and feta cheese. Delicious! We used a grill pan and they turned out simply fantastic. Quick and easy unique side dish. Enjoy.

Grilled Strawberries

Really! Grilled Strawberries! From shape.com’s “3 Ways to Savor Strawberries” comes grilled strawberries.  Skewer 3-4 fresh strawberries, brush with your favorite barbecue sauce and grill until you have a nice char on the fruit. Serve with grilled chicken or pork. The berries create a flavorful sweet sauce complementing the meat. Delicious and just a bit different…..enjoy.

Meringue Shells

Do you remember your grandmother’s meringue shells?  Well in this case it was Great-Grandmother Gormley’s meringues from Better Homes and Gardens Cookbook, circa 1948!

1/8 tsp salt

1/2 tsp vinegar

1/4 tsp vanilla

3 egg whites

1 cup sugar

Add salt, vinegar and vanilla to egg whites and beat until mixture forms peaks. Add sugar gradually and continue to beat until stiff peaks form. Spoon into a large plastic food bag, snip the corner and pipe away…..small wafer size mounds or larger. Cook at 300 degrees for 45 minutes. Cool on wire rack. Store in an air tight container.

Serve with balsamic strawberries! Delicious.
