Lemony Mediterranean Chicken and Rice

Zach brough a new magazine home – Cook’s Country and we found this Lemony Mediterranean Chicken and Rice – absolutely bursting with sumptuous flavors – savory chicken, freshness of the lemon zest, parsley and oregano. The marinade with the olive brine is interesting with amazing results, the chicken browned to perfection. Adding the gremolata provided quite the “big wallop” as the recipe suggests – very fresh, delicious and flavorful. Try it! Delicious chicken entrée. Enjoy.
