I saw this on the Today Show some weeks ago. Joy Bauer was preparing this No Noodle Cheesy Spinach Lasagna and we just had to try it. Totally worth it and definitely in the rotation. Delicious cheesy mixture of the ricotta and mozzarella, coupled with the spinach. I added a tsp of nutmeg. Delicious.
Prior to roasting, I allowed the eggplant to sit for 20 minutes to drain the moisture out. Slice the eggplant, place on paper towels, score slightly, salt and add more paper towels on top. Allow to sit for 20 minutes. Amazing how much liquid comes out. Same with the grape tomatoes, sliced them early and allowed them to drain awhile. You won’t have the water build up when you eat the leftovers!
